This is one of those incredibly easy recipes that you can whip up in mere minutes but it tastes like you put a lot of effort into it. I often make this for breakfast, even on work days! Not only is it tasty but it looks beautiful and is nutritious. A wonderful way to start the day!
This time of year I eat way more fruit than usual because of how perfect and abundant it is. Strawberries from the farmers market are such a great weekly treat. And all of the fresh herbs that are available! Oh, it is wonderful. The two together? Now you know the way to my heart.
Sometimes you envision a perfect dish - picture worthy, pinterest worthy...just beautiful. And you can achieve that...sometimes. Other times it's a massive flop. But OTHER times (and I think these are my favorite times) you don't achieve the original vision, however you do create something amazing! That is exactly what happened here.
I pictured a perfectly cooked baked egg on top of my avocado. And if I had emptied out the avocado shell a little more I probably would have gotten that. But I didn't want to waste any of the avocado goodness, so I filled the shell. And when I put my egg on top it didn't necessarily stay where I wanted it to. It's been such a busy past few weeks! I have hardly had time to post or even eat substantial amounts until dinner time every day. In times like this - where I know lunch will be a later meal - I make sure to have a breakfast that will keep me full and hold me over for the entire afternoon.
This breakfast does just that! Carbs, fat and protein all in one - without sacrificing flavor or taking too long to make! I've been back in Brooklyn since Monday night and I am still so exhausted. Jet lag this time around has been no joke! My night and day have totally swapped. While Australia was relaxing, I feel like the trip back undid a good chunk of it. So I've been craving things that will relax me.
I am a huge tea drinker. I just love the stuff (my apartment has an entire cabinet dedicated to tea and tea accessories!). Hot or iced - it doesn't matter. For whatever reason I've been craving carbonated beverages lately. So I thought...why not combine the two? I bet it'd be delicious! And it absolutely is. |
