Since being single, one of the biggest challenges I've faced is cooking for one. It's definitely changed the way I cook and shop for food. I feel like I am just now - over a year later - getting the hang of it.
I've come to really love meals that come together quickly and can be made as one serving just as easily as two or four servings. This flatbread is just that. Cooking just for you? Make one. Cooking for more? No problem! Make as many as you need with barely anymore effort. Last night I was out with some friends having drinks and buffalo chicken came up in conversation. Now, if you've been reading my blog for a while or know me IRL then you know I love buffalo chicken. So when we started to talk about our other friend's family and how they always have some sort of buffalo chicken food at family cookouts (sounds like my kind of family) it got me craving the good stuff.
Before I say anything about the process of making these, I just gotta say...these are AMAZING! You know how sometimes you cook something and once you taste it you're like "damn, I'm good" - I experienced that with this.
Moving on... Everyone knows what comfort food is. Some comfort foods are universally agreed upon (mac and cheese, anyone?) and others are comforting on a much more personal level.
Some of my favorite comfort foods are sunny side up eggs with buttered toast, pierogies fried in butter and sprinkled with sugar, and american grilled cheese on wheat bread. These foods aren't necessarily the healthiest, though they remind me of childhood in the best way! If we're gonna talk about comfort sweets, however...my number one is banana bread. If you live in the Northeast, then you know today's weather has been UNREAL. It is so beautiful outside! I've been in a pretty stubborn funk the last few months (hence my absence of regular blogging) but today's weather has been inspiring. In a pretty great way, too, because this broccoli slaw is insanely good.
Whether you're enjoying the spring-like warmth or actually living in the month of February, this slaw goes great with any light or heavy main dish you may be cooking up tonight. |
