I don't know about you, but sometimes I just get tired of the same old breakfast foods. Eggs, oatmeal, pancakes...they're all great, of course. I like to change it up every now and then though by taking one typical aspect of breakfast and doing something less common with it.
Easily one of my favorite parts of my first meal of the day is toast. A good, grainy, satisfying piece of toast. The best part about toast? The possibilities of what you use as spreads or toppings are endless! In this recipe I use the bright, refreshing flavors of lemon and apple to wake me up and get my day started on a delicious note! When I was younger, my Mom would always make eggs in purgatory for my brothers and I - a fried egg sandwiched between a mashed potato cake and tomato sauce - the idea being the potato cake is the clouds of heaven and the tomato sauce is the fires of hell, with the egg stuck in the middle like purgatory.
Whether or not you enjoy the fun name of the dish, there is no denying it is a unique take on breakfast and certainly a perfect dish for brunch. It's savory, hearty, and satisfying for the whole family! |
