Thanksgiving is such a wonderful food holiday. There is the obvious meal day of, but my favorite part is getting creative with the leftovers! I get started right away with breakfast the next morning.
A couple weeks ago a few wonderful fellow home cooks that I recently met through Umi Kitchen and I decided to have a potluck brunch together that happened to fall on Valentine's Day weekend. I immediately got excited because, well, who the hell wouldn't?!
I knew straight away that I wanted egg cups to be my contribution. After all they are delicious, beautiful, and easy to transport. Man, October has been an insanely busy month for me! So much excitement and catching up with old friends. Unfortunately it hasn't given me much time to cook, let alone blog. But luckily it has given me lots of time to come up with new ideas for dishes you'll love! And I finally have the time to share with you once more.
Like this morning - not only did I use leftovers from dinner yesterday (which I love to do) but it created an amazing fall morning meal. It's easy enough to do on a weekday before work or school and indulgent enough to want on the weekend. I just love the smell of cinnamon first thing on a chilly fall Sunday morning. When I woke up this morning I knew cinnamon had to somehow be involved in my breakfast.
Earlier this week I snacked on a pear with some almond butter at work. I loved the two flavors together and decided to recreate it this morning. Oats just made perfect sense in my mind to bring it all together! When I was a teenager and even into my early twenties I had no problem rolling out of bed and going wherever I needed to be (whether it was school or work) with no breakfast. That extra sleep was more important to me! Now my priorities have changed - if I don't eat breakfast at home I absolutely need to at least grab something on the go.
Buying food on the go can get pretty costly, not to mention may not always be the healthiest thing. So I'm taking "on-the-go" into my own hands. And I'm starting with these ham and spinach egg cups! |
