If you live in the Northeast, then you know today's weather has been UNREAL. It is so beautiful outside! I've been in a pretty stubborn funk the last few months (hence my absence of regular blogging) but today's weather has been inspiring. In a pretty great way, too, because this broccoli slaw is insanely good.
Whether you're enjoying the spring-like warmth or actually living in the month of February, this slaw goes great with any light or heavy main dish you may be cooking up tonight. I don't think there is any comfort food more comforting than pasta. It's so versatile - the amount of different pasta dishes that exist are countless. Each one is just as comforting as the last!
The last few weeks have been pretty hard on me, so pasta for dinner just had to happen. And, especially when I'm feeling stressed, it feels so easy and care-free to know that pasta goes with anything. I literally just checked out what was in my fridge/pantry and threw it together. This ended up being a fantastic combo, so I hope you give it a shot! Don't you love when a good friend is visiting? This weekend my best friend from childhood came to Brooklyn and stayed with me - it was awesome! She and her husband are leaving in two weeks to hike the entire Appalachian Trail (wish them luck!) and I wanted to spend as much time with her as possible since I won't see her for a good 7-8 months. This included wanting to cook her some awesome food without having to focus on the cooking too much.
So I made this amazing broccoli dish! It involves minimal prep. Cooking = simply pop in the oven. It is such a pleasant combination of flavors! The earthiness of the broccoli, the saltiness of the pecorino, the smokiness of the bacon...all brought together by the deep tones of extra virgin olive oil. |
