So I decided to make myself a delicious smoothie that would be hydrating and full of all the vitamins I need to not just feel better but get better!
What's worse than having a fever and sore throat? Having a fever and sore throat right in the middle of summer. Unfortunately this is my current situation. Usually I would baby myself with lots of hot tea and warm chicken noodle soup, but when it is 90 degrees outside those are kind of the last things I want.

So I decided to make myself a delicious smoothie that would be hydrating and full of all the vitamins I need to not just feel better but get better! This time of year I eat way more fruit than usual because of how perfect and abundant it is. Strawberries from the farmers market are such a great weekly treat. And all of the fresh herbs that are available! Oh, it is wonderful. The two together? Now you know the way to my heart.
Every year for Mother's Day my Mom makes chocolate covered strawberries. I know Mother's Day is still a few weeks out, but I find myself craving her strawberries like crazy right now! I don't want to spoil my chocolate intake before the time comes that I have my hands on hers, so I got the idea to do peanut butter covered strawberries instead. I think I found a new favorite - perhaps my Mom and I can trade our versions this year!
I have been in Australia since Sunday Morning and it has been wonderful. I love traveling to far places, especially when it means I can escape from the cold weather! One of the biggest challenges however is eating up all of your food before leaving. Two weeks is a long time to be away from home and I'd rather not return to sad, rotten food. Earlier in the week I did a full inventory of what we had in our fridge and planned ways to use it all up. The only oddball item was a pint of blueberries.
Last Monday morning when I was thinking about breakfast I wasn't entirely sure what to make. We had no eggs and no smoothie ingredients, but we did have bread. So I did a quick scan over my inventory list again and remembered that in addition to the blueberries I had a small jar of almond butter. The idea for these toasts just made perfect sense - I don't know why I hadn't thought this up before! I am ready to be done with winter. This one has been so cold! I had a tiny break last weekend in Florida and since then I've been craving the sun's warmth. Luckily I have a longer trip in just a week to sunny Australia! But in the meantime I want to feel like I'm already soaking up the sun, even if I'm actually bundled up in a sweater and its 20 degrees outside. The best way to do this? Eating food that reminds me of summer!
And that's where this delicious salad comes in. Strawberries, blueberries, and raspberries come together in all their berry-glory to brighten up a bed a spinach. With the addition of thinly sliced cucumber, creamy blue cheese, and a lemon vinaigrette it becomes instantly refreshing. Ahh, I can already feel that summer sun beating down on me. |
