Since being single, one of the biggest challenges I've faced is cooking for one. It's definitely changed the way I cook and shop for food. I feel like I am just now - over a year later - getting the hang of it.
I've come to really love meals that come together quickly and can be made as one serving just as easily as two or four servings. This flatbread is just that. Cooking just for you? Make one. Cooking for more? No problem! Make as many as you need with barely anymore effort. Man, October has been an insanely busy month for me! So much excitement and catching up with old friends. Unfortunately it hasn't given me much time to cook, let alone blog. But luckily it has given me lots of time to come up with new ideas for dishes you'll love! And I finally have the time to share with you once more.
Like this morning - not only did I use leftovers from dinner yesterday (which I love to do) but it created an amazing fall morning meal. It's easy enough to do on a weekday before work or school and indulgent enough to want on the weekend. When my mom comes to town she stays for two nights (a Friday to Sunday deal). One of these nights I take her out to a restaurant and the other night I cook something she wouldn't usually have. Seeing as it is the weekend before Halloween, dinner with fall flavors made a lot of sense!
Flavors like maple syrup. Cinnamon. Nutmeg. An added richness from goat cheese. An elevated sweetness from dried cranberries. Add a few veggies and pair with roasted acorn squash and you've got an amazing (vegetarian!) dinner. |
