Since being single, one of the biggest challenges I've faced is cooking for one. It's definitely changed the way I cook and shop for food. I feel like I am just now - over a year later - getting the hang of it.
I've come to really love meals that come together quickly and can be made as one serving just as easily as two or four servings. This flatbread is just that. Cooking just for you? Make one. Cooking for more? No problem! Make as many as you need with barely anymore effort. Okay...so I know Thanksgiving is just a few days away. I should be posting something to be served on the big day, right? Well hear me out. For me, Thanksgiving is about tradition. I have the same menu every year and look forward to knowing exactly what to expect on the table (or in my case, on our spiral staircase that we use as a tiered serving table in my tiny Brooklyn apartment). I know tradition isn't for everyone, but when it comes to Thanksgiving it is for me!
So my favorite part is before and after. Before for the Thanksgiving themed potlucks, work parties, etc when you aren't necessarily making a huge feast. After for, well, the LEFTOVERS! Before and after give me way more wiggle room for creativity. I love it. I don't think there is any comfort food more comforting than pasta. It's so versatile - the amount of different pasta dishes that exist are countless. Each one is just as comforting as the last!
The last few weeks have been pretty hard on me, so pasta for dinner just had to happen. And, especially when I'm feeling stressed, it feels so easy and care-free to know that pasta goes with anything. I literally just checked out what was in my fridge/pantry and threw it together. This ended up being a fantastic combo, so I hope you give it a shot! Sometimes you envision a perfect dish - picture worthy, pinterest worthy...just beautiful. And you can achieve that...sometimes. Other times it's a massive flop. But OTHER times (and I think these are my favorite times) you don't achieve the original vision, however you do create something amazing! That is exactly what happened here.
I pictured a perfectly cooked baked egg on top of my avocado. And if I had emptied out the avocado shell a little more I probably would have gotten that. But I didn't want to waste any of the avocado goodness, so I filled the shell. And when I put my egg on top it didn't necessarily stay where I wanted it to. I am so lucky to have a boyfriend that enjoys good food as much as I do. We are both talented in the kitchen and we both have our specialties that only that person makes because it comes out best that way. Whenever we want something like seared salmon, for example, I am the go-to cook that night. But chili on the other hand...that's Anthony's turf.
