     Ah, yes. The week of Christmas is finally here! Which means being with family and...cooking in slightly unfamiliar kitchens. Sure - I grew up in this house! But unlike the awesome kids on, say, Masterchef Junior, I was not cooking as a 12 year old and therefore my parents' kitchen is slightly foreign to me. The food in the fridge, however, is not foreign. In fact, it is comforting to see the foods I have come to expect to be in their fridge. 

     My mom has always been a fan of Mexican flavors - salsa, sour cream, cilantro, red peppers, and so on. These 4 items are practically a guarantee to be in that fridge. It may not sound very festive, but think about it! You have the red of the salsa and peppers, the green of the cilantro, the white of the sour cream...the colors of Christmas! Throw a couple eggs into the mix and you have one festively colored, absolutely delicious way to start the day!

     This has to be one of my favorite at-home breakfasts. It cooks up so easily and offers refreshing flavors that typically aren't associated with your first meal of the day. The one thing I really can't stress enough is how easy it is! In less than ten minutes you have a beautiful meal with seemingly no effort put in at all.

     The following recipe is for one person. You can easily make this over and over and over again - just prep your peppers and cilantro for all ahead of time and you will be churning these babies out! If you are home for the holidays and want to make an impressive breakfast for your family this is the way to go. Everyone will love it!

Festive Mexican Style Fried Eggs
Prep Time: 2 minutes
Cook Time: 5-6 minutes
Servings: 1 person

You Will Need:

  • 2 TBS diced red pepper
  • 2 TBS chopped fresh cilantro
  • a pat of butter
  • 2 large eggs
  • 2-3 spoonfuls salsa
  • 2-3 spoonfuls sour cream
  • salt and pepper, to taste

  1. Place butter in a small pan (see above photo - you want your eggs to fits the pan while cooking) and melt on medium heat. Add red pepper and saute for about one minute, until color seems to mellow out.
  2. Spread red pepper around pan and break open eggs over the red pepper (the eggs should spread and cover the surface of the pan). Immediately sprinkle cilantro all over as to let it cook into the egg itself. 
  3. Sprinkle salt and pepper to taste. Let eggs continue to cook for another 3-5 minutes, depending on how done you want them to be.
  4. Slide egg directly onto plate out of the pan. Dollop with salsa and sour cream. Enjoy!
