     You ever feel like you just need more greens in your life and there isn't enough ways to get them? After all, you can only eat so many salads. This calls for getting creative. If there is one thing I love to finish to the last drop it is sauce of any kind. I will lick a plate/bowl clean to get it all. This green sauce is PACKED with good for you ingredients plus it's raw so no cooking is involved!

     It's also super versatile. You can use it as a sauce, a dip, a dressing, a marinade - you name it! Plus the color is so amazing and vibrant...it is a great way to get kids and picky eaters alike to eat their greens.

add in two batches to fit in food processor
     Once a month I have a work gathering with my staff. We eat, drink, and enjoy each others' presence off the clock. I have to make the team favorites of course (like my Baked Prosciutto and Goat Cheese Wrapped Asparagus) but I like to think up a new thing to be served each time (as I do with holidays, too!). I figure we will be drinking plenty of calories, so we may as well have some healthy food to make us feel less guilty. 

     This sauce is certainly something my staff and I can feel good about eating! In this instance, this delicious green sauce was used to go with pasta. Try it with pasta, veggies, fish, steak, crackers - whatever!

Raw Green Sauce
Prep/"Cook" Time: 15 minutes
Servings: makes about 3 cups

You Will Need:

  • 5 cups baby spinach
  • 1 ripe avocado, halved and pitted
  • 1 cup fresh basil
  • 1 cup cold pressed extra virgin olive oil
  • 1 large garlic clove, sliced
  • juice of 2 limes
  • 1/2 tsp fine sea salt

  1. Combine all ingredients listed into a food processor and pulse to start, then process on low until smooth and creamy. That is seriously it!

           
*If necessary, put half the ingredients in, blend to shrink, and then put the rest in (see above photo for example). It seems like it won't all fit, but the spinach shrinks down a lot when processed.
