healthy snacking: chickpea and avocado dip edition

     I really wasn't sure what I wanted my next post to be. All I knew was I wanted something super easy. I ran a half marathon over the weekend (my first! I'm now addicted) and needless to say I've been very sore since. So the less time spent on my feet doing anything - even cooking - the better.

     While grocery shopping a couple days ago I bought some crunchy sesame pita sticks for no particular reason other than they were in front of my face and looked good. I thought maybe I could munch on them throughout the week with some hummus or guacamole or something. After getting home from work today I remembered the sticks. So I looked in my cabinets and figured out what I wanted to make. I took the main ingredient of hummus (chickpeas) and the main ingredient of guacamole (avocado) and combined them in this ridiculously easy, super healthy, absolutely delicious dip.

     The cool thing about what you need to make this dip is maybe two or three of the ingredients are things you will need to buy but it's mostly items that I think a decent amount of people have on hand at all times. I know I do! Which makes me wonder why I never though of this before. Hm.

     What will I do with my batch? I'm splitting it up into some small jars and bringing daily to work for a midday snack. You could do the same. You could make it for your Memorial Day picnic this upcoming weekend. You could spread it on sandwiches or wraps. You could eat it all at once by yourself (because sharing is sometimes overrated, right?). No matter how or when or where you eat it, I promise you will enjoy it!

Chickpea and Avocado Dip
Prep Time: 5-7 minutes
Cook Time: n/a
Servings: yields about 2 cups


You Will Need:
  • 1 15oz can chickpeas, drained and rinsed
  • 1 avocado, roughly sliced or cubed
  • 2 TBS lemon juice (from about 1 lemon)
  • 1/2 tsp salt
  • 1/2 tsp garlic powder
  • 1/2 tsp onion powder
  • 1/4 tsp cayenne pepper

  1. Place all ingredients in a food processor and pulse a few times before putting on low. Let process for about 30-45 seconds, until a smooth dip has formed and all ingredients are combined thoroughly.
