oh so good: homemade chamomile soda

     I've been back in Brooklyn since Monday night and I am still so exhausted. Jet lag this time around has been no joke! My night and day have totally swapped. While Australia was relaxing, I feel like the trip back undid a good chunk of it. So I've been craving things that will relax me.

     I am a huge tea drinker. I just love the stuff (my apartment has an entire cabinet dedicated to tea and tea accessories!). Hot or iced - it doesn't matter. For whatever reason I've been craving carbonated beverages lately. So I thought...why not combine the two? I bet it'd be delicious! And it absolutely is.

     This is a perfect drink just in time for spring. It's nice and light with such a pleasant, soothing flavor. You can enjoy on it's own, with a meal, or with a small snack of nuts, fruit, or crackers. 

It's way easier to make than you would think. Pour it into a fancy pitcher or, as I like to do, a curvy vase and serve to friends. It'll be very cute and impressive!

Homemade Chamomile Soda
Prep Time: 2 minutes
Cook Time: 20 minutes (brewing)
Servings: 4-6 glasses


You Will Need:
  • 4 Chamomile Tea Bags
  • 1/2 cup granulated sugar
  • 2 cups seltzer

  1. Bring 2 cups of water to a boil and remove from heat. Add tea bags and let brew for 20 minutes.
  2. Meanwhile, in a small pot combine sugar and 1/2 cup of water and place on medium heat to create a simple syrup. Stir constantly until sugar is fully melted (about 1 minute) and remove from heat. 
  3. Pour chamomile tea and simple syrup into a pitcher and add seltzer. Gently stir to mix. Serve with ice. Will keep in the refrigerator for 24 hours before going flat.
