I just love the smell of cinnamon first thing on a chilly fall Sunday morning. When I woke up this morning I knew cinnamon had to somehow be involved in my breakfast.
Earlier this week I snacked on a pear with some almond butter at work. I loved the two flavors together and decided to recreate it this morning. Oats just made perfect sense in my mind to bring it all together! For the last couple of weeks my boyfriend had been exploring Canada and Alaska with his mom. I've become so accustom to cooking for two that cooking for one was quite the challenge! I realized a couple days in that the best course of action was to make things that would hold up well into the next day so I could have leftovers for the next day's lunch.
This is one of those incredibly easy recipes that you can whip up in mere minutes but it tastes like you put a lot of effort into it. I often make this for breakfast, even on work days! Not only is it tasty but it looks beautiful and is nutritious. A wonderful way to start the day!
I don't know about where you are but here in Brooklyn it has been quite hot. There is just no way I was turning on the oven or the stove top last night. So the grill it was!
Being that it was a Saturday night, my fridge was down to the last of the week's groceries. I didn't have much but I did have some produce still. A nice big eggplant, couple of bell peppers, radishes, spring onion...and skewers were just the obvious choice to use them all up. I've said it before and I will continue to say it again and again - I LOVE the bounty of fresh produce available at farmer's markets during the summer! Today I bought so many beautiful things...heirloom tomatoes, peaches, peppers, apricots...and of course the 2-in-1 treat of radishes with the greens still attached. Many people toss the leaves out not realizing they are edible and insanely delicious too!
