     It's been such a busy past few weeks! I have hardly had time to post or even eat substantial amounts until dinner time every day. In times like this - where I know lunch will be a later meal - I make sure to have a breakfast that will keep me full and hold me over for the entire afternoon.

     This breakfast does just that! Carbs, fat and protein all in one - without sacrificing flavor or taking too long to make!

     I love the combination of fruit and any type of nut butter on toast. You may recall my post a while back for Blueberry and Almond Butter Toast. You could say this is a spin off of that! Peanut butter and banana is a classic combination (Elvis, anyone?). I could have added honey, but the banana already added sweet to the semi-salty peanut butter. So I went with bee pollen instead - adding an unexpected but very delicious earthy flavor!

     I bought bee pollen at my local farmers market, but I have seen it start to pop up in many grocery stores. If you can't find it anywhere you could replace it with honey for more sweetness or hemp seeds/flax seeds if you still want that earthy crunch.

Peanut Butter, Banana, and Bee Pollen Toast
Prep Time: 3 minutes
Cook Time: 2-5 minutes (depending on your preferred toast done-ness)
Servings: 1 person


You Will Need:
  • 1 slice good, crusty bread (I used whole wheat sourdough)
  • 2 TBS natural peanut butter
  • 1/2 small banana, sliced
  • 1/4 tsp bee pollen

  1. Toast your bread until your desired done-ness.
  2. Spread peanut butter on toast. Place banana slices all over. Sprinkle with bee pollen. Enjoy!
