When I was a teenager and even into my early twenties I had no problem rolling out of bed and going wherever I needed to be (whether it was school or work) with no breakfast. That extra sleep was more important to me! Now my priorities have changed - if I don't eat breakfast at home I absolutely need to at least grab something on the go.
Buying food on the go can get pretty costly, not to mention may not always be the healthiest thing. So I'm taking "on-the-go" into my own hands. And I'm starting with these ham and spinach egg cups! For the last couple of weeks my boyfriend had been exploring Canada and Alaska with his mom. I've become so accustom to cooking for two that cooking for one was quite the challenge! I realized a couple days in that the best course of action was to make things that would hold up well into the next day so I could have leftovers for the next day's lunch.
This is one of those incredibly easy recipes that you can whip up in mere minutes but it tastes like you put a lot of effort into it. I often make this for breakfast, even on work days! Not only is it tasty but it looks beautiful and is nutritious. A wonderful way to start the day!
What's worse than having a fever and sore throat? Having a fever and sore throat right in the middle of summer. Unfortunately this is my current situation. Usually I would baby myself with lots of hot tea and warm chicken noodle soup, but when it is 90 degrees outside those are kind of the last things I want.
When I'm sick I refuse to let it spoil eating food that I enjoy. I still have great food but make sure that it is something that will benefit me and help me feel better. So I decided to make myself a delicious smoothie that would be hydrating and full of all the vitamins I need to not just feel better but get better! I don't think there is any comfort food more comforting than pasta. It's so versatile - the amount of different pasta dishes that exist are countless. Each one is just as comforting as the last!
The last few weeks have been pretty hard on me, so pasta for dinner just had to happen. And, especially when I'm feeling stressed, it feels so easy and care-free to know that pasta goes with anything. I literally just checked out what was in my fridge/pantry and threw it together. This ended up being a fantastic combo, so I hope you give it a shot! |
