What's worse than having a fever and sore throat? Having a fever and sore throat right in the middle of summer. Unfortunately this is my current situation. Usually I would baby myself with lots of hot tea and warm chicken noodle soup, but when it is 90 degrees outside those are kind of the last things I want.
When I'm sick I refuse to let it spoil eating food that I enjoy. I still have great food but make sure that it is something that will benefit me and help me feel better. So I decided to make myself a delicious smoothie that would be hydrating and full of all the vitamins I need to not just feel better but get better! I don't think there is any comfort food more comforting than pasta. It's so versatile - the amount of different pasta dishes that exist are countless. Each one is just as comforting as the last!
The last few weeks have been pretty hard on me, so pasta for dinner just had to happen. And, especially when I'm feeling stressed, it feels so easy and care-free to know that pasta goes with anything. I literally just checked out what was in my fridge/pantry and threw it together. This ended up being a fantastic combo, so I hope you give it a shot! I really wasn't sure what I wanted my next post to be. All I knew was I wanted something super easy. I ran a half marathon over the weekend (my first! I'm now addicted) and needless to say I've been very sore since. So the less time spent on my feet doing anything - even cooking - the better.
While grocery shopping a couple days ago I bought some crunchy sesame pita sticks for no particular reason other than they were in front of my face and looked good. I thought maybe I could munch on them throughout the week with some hummus or guacamole or something. After getting home from work today I remembered the sticks. So I looked in my cabinets and figured out what I wanted to make. I took the main ingredient of hummus (chickpeas) and the main ingredient of guacamole (avocado) and combined them in this ridiculously easy, super healthy, absolutely delicious dip. I am so lucky to have a boyfriend that enjoys good food as much as I do. We are both talented in the kitchen and we both have our specialties that only that person makes because it comes out best that way. Whenever we want something like seared salmon, for example, I am the go-to cook that night. But chili on the other hand...that's Anthony's turf.
I've been back in Brooklyn since Monday night and I am still so exhausted. Jet lag this time around has been no joke! My night and day have totally swapped. While Australia was relaxing, I feel like the trip back undid a good chunk of it. So I've been craving things that will relax me.
I am a huge tea drinker. I just love the stuff (my apartment has an entire cabinet dedicated to tea and tea accessories!). Hot or iced - it doesn't matter. For whatever reason I've been craving carbonated beverages lately. So I thought...why not combine the two? I bet it'd be delicious! And it absolutely is. |
